Healthy Tuna Melts
Ingredients:
- 2 cans (5 ounces each) of tuna in water, drained
- 1/4 cup plain Greek yogurt
- 2 tablespoons light mayonnaise
- 1 tablespoon Dijon mustard
- 1 stalk celery, finely chopped
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 4 whole grain English muffins, split and toasted
- 1 cup shredded mozzarella cheese
- Optional: Sliced tomato, avocado, or spinach leaves for topping
Instructions:
- Preheat your oven to 375°F (190°C).
- In a medium-sized bowl, combine the drained tuna, Greek yogurt, light mayonnaise, Dijon mustard, chopped celery, green onions, and parsley. Mix well until all ingredients are combined.
- Season the tuna mixture with salt and pepper to taste.
- Place the English muffin halves on a baking sheet lined with parchment paper.
- Spoon the tuna mixture evenly onto each English muffin half.
- Sprinkle shredded mozzarella cheese over the tuna mixture on each English muffin half.
- If desired, add sliced tomato, avocado, or spinach leaves on top of the cheese.
- Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let the tuna melts cool for a few minutes before serving.
- Serve warm and enjoy your healthy tuna melts!
