Home Made Chicken, Mushroom, And Zucchini Bake

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil
  • 1 pound (about 450g) cremini or white mushrooms, sliced
  • 2 medium zucchinis, sliced
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Season the Chicken: Season the chicken breasts with salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary. Ensure both sides are well-seasoned.
  3. Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side or until they develop a golden brown crust. Remove the chicken from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add a bit more olive oil if needed. Add sliced mushrooms, zucchini, sliced onion, and minced garlic. Sauté for 5-6 minutes or until the vegetables are softened.
  5. Prepare Sauce: Pour in the chicken broth and heavy cream. Stir to combine. Allow the mixture to simmer for a few minutes, letting the flavors meld.
  6. Add Chicken Back In: Return the seared chicken breasts to the skillet, nestling them into the vegetable mixture.
  7. Top with Cheese: Sprinkle shredded mozzarella and grated Parmesan cheese over the chicken and vegetables.
  8. Bake: Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
  9. Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley before serving.
  10. Serve: Serve the Chicken, Mushroom, and Zucchini Bake directly from the skillet. Optionally, you can serve it over cooked pasta, rice, or with a side of crusty bread.
