Home Made Lime Fluff

Ingredients:

  • 1 package (3.4 ounces) lime-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1/2 cup ice cubes
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 cup miniature marshmallows
  • Additional whipped cream and lime zest for garnish (optional)

Instructions:

  1. Prepare Lime Gelatin: Dissolve the lime-flavored gelatin in boiling water in a large mixing bowl. Stir until the gelatin is completely dissolved.
  2. Add Cold Water and Ice Cubes: Add the cold water and ice cubes to the dissolved gelatin. Stir until the ice cubes are melted, and the mixture begins to thicken.
  3. Prepare Cream Cheese Mixture: In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Combine Cream Cheese Mixture: Gradually add the cream cheese mixture to the thickening gelatin, mixing well until smooth.
  5. Fold in Whipped Cream: Gently fold in the whipped cream until well combined. Be careful not to deflate the whipped cream.
  6. Add Pineapple and Marshmallows: Stir in the drained crushed pineapple and miniature marshmallows until evenly distributed.
  7. Chill: Transfer the lime fluff mixture to a serving bowl or individual dessert cups. Refrigerate for at least 2-3 hours or until set.
  8. Garnish and Serve: Before serving, garnish with additional whipped cream and lime zest if desired.
