Homemade Cucumber Sandwiches

Ingredients (Makes 8 sandwiches):

  • 1 medium cucumber (thinly sliced)
  • 8 slices low-calorie bread (or use whole-grain for added fiber)
  • 4 tbsp reduced-fat cream cheese
  • 1 tsp dried dill (or fresh, finely chopped)
  • 1 tsp garlic powder (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cream Cheese Spread:
    In a small bowl, mix the reduced-fat cream cheese with dried dill, garlic powder (if using), salt, and pepper. Stir until well combined and creamy.
  2. Assemble the Sandwiches:
    • Spread a thin layer of the cream cheese mixture evenly over one side of each slice of bread.
    • Arrange the cucumber slices on four of the bread slices, slightly overlapping for full coverage.
    • Place the remaining slices of bread (cream cheese side down) on top of the cucumbers to make sandwiches.
  3. Cut and Serve:
    • Use a sharp knife to cut each sandwich into quarters (triangles or squares) for a neat, bite-sized presentation.
    • Serve immediately, or chill in the refrigerator for 10–15 minutes for a cooler, crisper bite.
