- Prepare the Coconut Filling: In a mixing bowl, combine the shredded coconut, coconut cream, powdered erythritol, and vanilla extract (if using). Mix until the coconut is fully coated and the mixture holds together. If the mixture seems too dry, add a bit more coconut cream.
- Form the Bars: Line a baking dish or a tray with parchment paper. Using your hands, shape the coconut mixture into bars or small rectangles and place them on the prepared tray. You can make them as thick or as thin as you like. Once shaped, place the tray in the freezer for about 30 minutes to firm up.
- Make the Chocolate Coating: In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. Be careful not to overheat the chocolate.
- Coat the Bars: Once the coconut bars are firm, remove them from the freezer. Dip each bar into the melted chocolate, ensuring they are fully coated. Place the chocolate-covered bars back on the parchment-lined tray.
- Set the Bars: After coating, return the tray to the freezer for about 15-20 minutes, or until the chocolate has set.
