Jackfruit Pot Roast for a crowd

Ingredients
-4 tablespoons vegan butter
-2 yellow onions sliced
-8 cloves of garlic, minced
-3 Tablespoons of Better than bullion vegetable
-1/2 cup A1 sauce
-3 tablespoon of vegan Worcestershire sauce
-3 teaspoon of dried thyme
-3 teaspoon of dried basil
-3 teaspoons onion powder
-2 teaspoon of fine sea salt
-1 teaspoon of red pepper flakes (optional)
-4 cans of young jackfruit (drained & rinsed)
-4 cups water + 3 tablespoon of cornstarch
-1 pound of red or mixed baby potatoes cut into halves
-1 pound of baby carrots
-5 ribs of celery peeled & cut
-1lb portobello mushrooms cut into chunks
*Heat butter in a large skillet or pot
*Add onions & garlic & sautee for 5 minutes
*Add bullion, worcestershire, A1 sauce & all of the seasonings
*Add jackfruit & cornstarch/water mix
*Let simmer for 1hr
*Fill roast pan with potatoes, carrots, mushrooms, & celery
*Add jackfruit mixture over top of the vegetables evenly
*Cover & roast on 350 for 1hr or until vegetables are tender
