Keto JAMAICAN BANANA BREAD
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 3 large ripe bananas (mashed)
- 3 large eggs
- 1/4 cup unsweetened almond milk (or any milk substitute)
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/3 cup erythritol (or any keto-friendly sweetener)
- 1/2 cup chopped walnuts or pecans (optional)

Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
- In another bowl, mash the ripe bananas until smooth. Add in the eggs, almond milk, melted coconut oil, vanilla extract, and erythritol. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- If desired, fold in the chopped nuts into the batter.
- Pour the batter into the prepared loaf pan, spreading it out evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the banana bread from the oven and let it cool in the pan for 10-15 minutes.
- After cooling slightly, transfer the bread to a wire rack to cool completely before slicing.
