Keto and Low-Carb Mexican Shrimp Cocktail
Ingredients:
- 1 pound cooked shrimp, peeled and deveined
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped (optional)
- 1 cup sugar-free tomato sauce or tomato puree
- 1/4 cup fresh lime juice
- 1 tablespoon hot sauce (adjust to taste)
- Salt and pepper to taste
- Optional: lime wedges and additional cilantro for garnish

Instructions:
- Prepare the Shrimp: If you haven’t already, cook the shrimp by boiling them in water until they turn pink and opaque. Drain and let them cool down.
