Ingredients:

For the Fritters:
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or other keto-friendly milk)
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1/2 tsp apple extract (for that apple flavor)
  • 1/4 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional, for added sweetness)
  • 1/4 cup avocado oil (or other high-heat cooking oil) for frying
For the Glaze (optional):
  • 1/2 cup powdered erythritol
  • 2 tbsp unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 1/4 tsp apple extract

Instructions:

1. Prepare the Fritter Dough:

  • In a large bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, and salt.
  • In another bowl, beat the eggs with the erythritol, apple extract, and vanilla extract until smooth.
  • Slowly add the wet ingredients into the dry ingredients and mix until combined. The dough should be thick but soft. If needed, add a little more almond milk to reach a thick batter consistency.

2. Heat the Oil:

  • Heat the avocado oil (or your preferred high-heat oil) in a large frying pan or skillet over medium heat. You want enough oil to submerge the fritters partially.

3. Form and Fry the Fritters:

  • Once the oil is hot, use a spoon or your hands to shape the dough into small balls or mounds (about 2 tablespoons of dough per fritter).
