KETO BASQUE BURNT CHEESECAKE
Ingredients:
- 4 packages (32 oz total) cream cheese, at room temperature
- 1 1/4 cups powdered erythritol or monk fruit sweetener
- 4 large eggs
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Zest of one lemon (optional)
- Pinch of salt

Instructions:
- Preheat your oven: Preheat your oven to 400°F (200°C). Prepare a 9-inch springform pan by lining it with parchment paper on the bottom and sides.
- Prepare the Batter: In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the powdered erythritol (or monk fruit sweetener) and beat until well combined and fluffy. Add eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
- Add Cream and Flavorings: Pour in the heavy cream, vanilla extract, lemon zest (if using), and a pinch of salt. Beat until the mixture is smooth and well combined.
- Bake the Cheesecake: Pour the batter into the prepared springform pan. Tap the pan gently on the counter to release any air bubbles. Place the pan in the preheated oven and bake for about 45-50 minutes, or until the top is deeply golden brown and the center is set but still slightly jiggly.
- Cooling: Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
- Serve: Before serving, release the cheesecake from the springform pan and transfer it to a serving plate. Slice and serve chilled.
