Keto Beef and Broccoli Stir Fry
Ingredients:
- 1 lb (450g) beef steak, thinly sliced (you can use sirloin, flank, or ribeye)
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 2 tablespoons olive oil or avocado oil
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon erythritol or your preferred keto-friendly sweetener
- Salt and pepper to taste
- Optional: red pepper flakes for heat
- Sesame seeds for garnish
Instructions:
- In a small bowl, mix together soy sauce, sesame oil, rice vinegar, erythritol, and minced garlic to create the marinade. Set aside.
- Slice the beef thinly against the grain. This helps to tenderize the meat.
- Place the sliced beef in a bowl and pour half of the marinade over it. Toss well to coat the beef evenly. Let it marinate for about 15-20 minutes at room temperature, or you can refrigerate it for up to 1 hour if you have time.
- Heat 1 tablespoon of olive oil or avocado oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef slices to the skillet. Stir-fry for 2-3 minutes until the beef is cooked to your desired doneness. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of oil. Add broccoli florets to the skillet and stir-fry for about 3-4 minutes until they are tender but still crisp.
- Return the cooked beef to the skillet with the broccoli. Pour the remaining marinade over the beef and broccoli. Stir well to combine and coat everything with the sauce. Cook for an additional 1-2 minutes until heated through.
- Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.
