
Ingredients:
For the French Toast:
- 4 slices of keto-friendly bread (such as almond flour or coconut flour bread)
- 2 large eggs
- 1/4 cup heavy cream or unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 tablespoon granulated erythritol or your preferred keto-friendly sweetener
- Pinch of salt
- Butter or coconut oil for frying
For the Big Mac Filling:
- 1/2 lb ground beef
- Salt and pepper to taste
- 1/4 cup diced onion
- 2 tablespoons diced pickles
- 2 tablespoons sugar-free thousand island dressing
- 4 slices cheddar cheese or cheese of your choice
- Shredded lettuce
Instructions:
- Prepare the ground beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with salt and pepper to taste. Stir in the diced onion and cook until softened. Set aside.
- In a shallow bowl, whisk together the eggs, heavy cream or almond milk, vanilla extract, sweetener, and a pinch of salt until well combined.
- Dip each slice of keto bread into the egg mixture, ensuring it is well coated on both sides.
- Heat a skillet or frying pan over medium heat and add a small amount of butter or coconut oil.
- Place the coated bread slices onto the skillet and cook until golden brown on both sides, about 2-3 minutes per side. Remove from the skillet and set aside.
- Assemble the French toast sandwiches: Take two slices of French toast and spread sugar-free thousand island dressing on one side of each slice.
- Divide the cooked ground beef mixture onto one slice of French toast, followed by diced pickles, shredded lettuce, and a slice of cheddar cheese.
- Place the other slice of French toast on top to make a sandwich.
- Repeat with the remaining slices of French toast and filling ingredients.
- Return the assembled sandwiches to the skillet and cook for another 1-2 minutes on each side, until the cheese is melted and the sandwiches are heated through.
