Keto Brioche Buns
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup psyllium husk powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup low-carb sweetener (such as erythritol or stevia)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
- In a separate bowl, beat the eggs and then add melted butter, sour cream, vanilla extract, and the low-carb sweetener. Mix well until all ingredients are combined.
- Pour the wet ingredients into the dry ingredients and stir until a thick, sticky dough forms.
- Divide the dough into 6 equal portions and shape them into buns. Place them on the prepared baking sheet.
- Optionally, you can brush the tops of the buns with a little melted butter for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the buns are golden brown and a toothpick inserted into the center comes out clean.
- Allow the buns to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
