Keto Broccoli Cheese Stuffed Chicken Breasts

Ingredients:

  • boneless, skinless chicken breasts
  • 1 cup broccoli florets, finely chopped and lightly steamed
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (for searing)
  • Optional: toothpicks to secure chicken

 

 


Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare the filling:
    In a bowl, mix the steamed broccoli, cheddar cheese, cream cheese, garlic powder, and a pinch of salt and pepper. Combine until creamy and well-mixed.
  3. Prepare the chicken:
    Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  4. Stuff the chicken:
    Fill each chicken breast with the broccoli-cheese mixture. Use toothpicks to secure the opening if needed.
  5. Season the outside:
    Rub the outside of the chicken with olive oil, then sprinkle with paprika, onion powder, salt, and pepper.
  6. Sear the chicken (optional for extra flavor):
    Heat a skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden.
  7. Bake:
    Transfer the chicken to a baking dish and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Rest and serve:
    Let the chicken rest for a few minutes before slicing. Serve hot with a side salad or roasted keto veggies.
