Ingredients:
- 1 small head of cabbage, shredded
- 1 pound ground beef or ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 4 cups beef or vegetable broth (check for low-carb content)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: 1 cup chopped celery or bell peppers
Instructions:
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add chopped onions and garlic, sauté until they become translucent.
- Add ground beef or turkey to the pot and cook until browned. Make sure to break it into small crumbles as it cooks.
- Once the meat is cooked, add shredded cabbage to the pot. Stir well to combine.
- Pour in diced tomatoes with their juice and add the dried oregano, dried basil, smoked paprika, salt, and pepper. Mix everything thoroughly.
- If you’re using celery or bell peppers, add them to the pot at this point.
- Pour in the beef or vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20-30 minutes, or until the cabbage is tender.
- Taste and adjust the seasonings as needed. You can add more salt, pepper, or herbs according to your preference.
