Keto Cabbage Soup

Ingredients:

  • 1 small head of cabbage, shredded
  • 1 pound ground beef or ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 4 cups beef or vegetable broth (check for low-carb content)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: 1 cup chopped celery or bell peppers

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add chopped onions and garlic, sauté until they become translucent.
  3. Add ground beef or turkey to the pot and cook until browned. Make sure to break it into small crumbles as it cooks.
  4. Once the meat is cooked, add shredded cabbage to the pot. Stir well to combine.
  5. Pour in diced tomatoes with their juice and add the dried oregano, dried basil, smoked paprika, salt, and pepper. Mix everything thoroughly.
  6. If you’re using celery or bell peppers, add them to the pot at this point.
  7. Pour in the beef or vegetable broth and bring the soup to a boil.
  8. Reduce the heat to low, cover the pot, and let it simmer for about 20-30 minutes, or until the cabbage is tender.
  9. Taste and adjust the seasonings as needed. You can add more salt, pepper, or herbs according to your preference.
