KETO CAJUN SHRIMP PASTA WITH SAUSAGE

Ingredients:

  • 8 ounces keto-friendly pasta (such as zucchini noodles, spaghetti squash, or a low-carb pasta alternative)
  • 1/2 pound large shrimp, peeled and deveined
  • 1/2 pound keto-friendly sausage (such as andouille or another low-carb variety)
  • 1 tablespoon Cajun seasoning (adjust to your preferred level of spiciness)
  • 1/4 cup diced bell peppers (red and green for color)
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth (no sugar added)
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Cook the Keto-Friendly Pasta:
    • Prepare the keto-friendly pasta according to the package instructions. Drain and set aside.
  2. Prepare the Sausage and Shrimp:
    • In a large skillet over medium heat, cook the keto-friendly sausage until browned and cooked through. Remove the sausage from the skillet and set it aside.
    • In the same skillet, add the shrimp and sprinkle with Cajun seasoning. Cook for about 2-3 minutes per side or until the shrimp turns pink and is cooked. Remove the shrimp and set it aside.
  3. Prepare the Cajun Sauce:
    • In the same skillet, add the diced bell peppers, onion, and garlic. Sauté for a few minutes until they soften.
  4. Add the heavy cream and chicken broth to the skillet. Simmer for a few minutes to reduce and thicken the sauce. Stir in the unsalted butter until it melts and the sauce becomes creamy.
  5. Return the cooked sausage and shrimp to the skillet. Heat everything together for a few minutes to ensure the flavors meld.
  6. Season the sauce with salt and black pepper to taste.
  7. Serve the Cajun Shrimp and Sausage mixture over the prepared keto-friendly pasta.
  8. Garnish with chopped fresh parsley before serving.
