KETO CHCOLATE CAKE

Ingredients

  • For the Cake:
    • 2 cups almond flour
    • 1/2 cup unsweetened cocoa powder
    • 1/2 cup erythritol (or your preferred keto sweetener)
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 3 large eggs
    • 1/2 cup unsweetened almond milk (or other low-carb milk)
    • 1/2 cup melted coconut oil (or unsalted butter)
    • 1 teaspoon vanilla extract
  • For the Chocolate Frosting:
    • 1/2 cup unsweetened cocoa powder
    • 1/2 cup unsalted butter, softened
    • 1/2 cup powdered erythritol
    • 1/4 cup unsweetened almond milk (or more, as needed)
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Make the Cake Batter:
    • In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, baking soda, and salt. Mix well.
    • In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
