Keto Cheese Flan
Ingredients:
- 1 cup cream cheese, softened
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup powdered erythritol (or any other keto-friendly sweetener)
- 1 teaspoon vanilla extract
- 1/4 cup water
- 1/4 cup powdered erythritol for caramelizing (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare Ramekins: Grease 4 to 6 ramekins or a baking dish with butter or cooking spray. Set aside.
- Make the Flan Mixture:
- In a blender or food processor, combine the softened cream cheese, eggs, heavy cream, 1/2 cup powdered erythritol, and vanilla extract. Blend until smooth and well combined.
- Prepare the Caramel (Optional):
- In a small saucepan, heat 1/4 cup of water over medium heat. Once the water is warm, add 1/4 cup of powdered erythritol to the saucepan.
- Stir occasionally until the erythritol dissolves completely and the mixture starts to simmer.
- Continue to cook without stirring until the mixture turns into a golden brown caramel. Be careful not to burn it.
- Quickly pour the caramel into the prepared ramekins or baking dish, swirling to coat the bottom evenly.
- Pour the Flan Mixture:
- Pour the cream cheese mixture into the ramekins or baking dish over the caramel layer.
- Bake the Flan:
- Place the ramekins or baking dish into a larger baking pan. Fill the larger pan with enough hot water to reach halfway up the sides of the ramekins or baking dish.
- Carefully transfer the baking pan to the preheated oven.
- Bake for about 30-40 minutes or until the flan is set around the edges but slightly jiggly in the center.
- Cool and Chill:
- Remove the flan from the oven and let it cool to room temperature.
- Once cooled, cover the ramekins or baking dish with plastic wrap and refrigerate for at least 4 hours or overnight to chill and set completely.
- Serve:
- To serve, run a knife around the edges of the ramekins or baking dish to loosen the flan. Invert the flan onto serving plates, allowing the caramel to flow over the top.
