Keto Cheese-Wrapped Burrito Recipe
Ingredients

For the Cheese Wrap:

1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
For the Filling:

1/2 lb ground beef
Salt and pepper, to taste
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika

1/2 cup shredded lettuce
1/2 medium tomato, diced
2 tablespoons salsa (sugar-free)
2 tablespoons sour cream
2 tablespoons guacamole (or mashed avocado)
Instructions
Step 1: Make the Cheese Wrap

Prepare the Cheese Layer:
In a medium-sized non-stick skillet, combine 1 cup shredded mozzarella and 1 cup shredded cheddar cheese. Spread the cheese evenly to form a circle, similar in size to a tortilla.
Heat the skillet over medium heat until the cheese begins to melt and form a cohesive layer.

Cook the Cheese Wrap:
Let the cheese cook for about 3-5 minutes. The edges should start to bubble and turn golden brown as the cheese melts together. This will create a crispy, slightly firm edge, which makes it easier to handle as a wrap.
Once the cheese wrap is golden around the edges, carefully remove the skillet from heat. Allow the cheese to cool for a couple of minutes in the pan; this cooling time will help the cheese firm up, making it easier to use as a wrap.
Transfer to a Plate:
After the cheese has cooled slightly and is easy to handle, carefully transfer the cheese wrap to a plate. Allow it to cool further while you prepare the filling.
Step 2: Prepare the Filling

Cook the Ground Beef:
In a separate skillet over medium-high heat, cook the ground beef, breaking it up with a spatula as it browns.
Season the beef with salt, pepper, garlic powder, onion powder, and paprika. Continue cooking until the beef is fully cooked and no pink remains, about 5-7 minutes.
Drain any excess grease if needed, then set the beef aside.
Prepare the Fresh Toppings:
While the beef cools slightly, prepare your toppings. Shred the lettuce, dice the tomato, and get the salsa, sour cream, and guacamole ready.
Step 3: Assemble the Burrito

Add the Filling:
Place the cooled cheese wrap on a flat surface or keep it on the plate. Spoon the cooked ground beef into the center of the cheese wrap, leaving space around the edges for easy wrapping.
Add the shredded lettuce, diced tomato, salsa, sour cream, and guacamole on top of the beef.
Wrap the Burrito:
Fold the cheese wrap over the fillings, just like you would a regular burrito. Start by folding in the sides, then roll the cheese wrap over the filling to create a burrito shape.
To keep everything secure, you can wrap the cheese burrito in a piece of aluminum foil. This will help hold the fillings together and make it easier to eat.

Serving Suggestions
Slice the burrito in half and enjoy it right away, or leave it wrapped in foil for easier handling on the go.
Serve with extra salsa, guacamole, or a side salad if desired.
