Instructions
- Prepare the Strawberries:
- Wash the strawberries and pat them dry with a paper towel. Using a small knife, hull each strawberry by cutting around the top and scooping out the center to create a small cavity for the filling. Set aside.
- Make the Cheesecake Filling:
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the heavy whipping cream, powdered erythritol, and vanilla extract, then beat again until the mixture is smooth, fluffy, and slightly thickened.
- Fill the Strawberries:
- Spoon the cheesecake filling into a piping bag or a plastic zip-top bag with a small hole cut in the corner.
- Pipe the filling into each strawberry, filling it to the top. You can swirl the tip of the piping bag as you pull up to create a decorative peak.
- Add Optional Toppings:
- For added flavor and texture, sprinkle chopped nuts or shredded coconut over the filled strawberries, or drizzle them with melted sugar-free chocolate.
- Chill and Serve:
- Arrange the filled strawberries on a serving platter and refrigerate for at least 15 minutes to allow the filling to firm up slightly.
