Ingredients

  • 15-20 fresh strawberries
  • 4 oz cream cheese, softened
  • 1/4 cup heavy whipping cream
  • 2-3 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • Optional toppings: chopped nuts, shredded coconut, sugar-free chocolate drizzle

Instructions

  1. Prepare the Strawberries:
    • Wash the strawberries and pat them dry with a paper towel. Using a small knife, hull each strawberry by cutting around the top and scooping out the center to create a small cavity for the filling. Set aside.
  2. Make the Cheesecake Filling:
    • In a mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the heavy whipping cream, powdered erythritol, and vanilla extract, then beat again until the mixture is smooth, fluffy, and slightly thickened.
  3. Fill the Strawberries:
    • Spoon the cheesecake filling into a piping bag or a plastic zip-top bag with a small hole cut in the corner.
    • Pipe the filling into each strawberry, filling it to the top. You can swirl the tip of the piping bag as you pull up to create a decorative peak.
  4. Add Optional Toppings:
    • For added flavor and texture, sprinkle chopped nuts or shredded coconut over the filled strawberries, or drizzle them with melted sugar-free chocolate.
  5. Chill and Serve:
    • Arrange the filled strawberries on a serving platter and refrigerate for at least 15 minutes to allow the filling to firm up slightly.
    • Serve chilled and enjoy!
