Keto Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1 cup sugar-free marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, mix almond flour, Parmesan cheese, garlic powder, onion powder, dried oregano, dried basil, salt, and pepper.
  3. Dip each chicken breast into the beaten eggs, then coat with the almond flour mixture, pressing the coating onto the chicken to adhere.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the coated chicken breasts and cook for 3-4 minutes per side or until golden brown.
  5. Spoon marinara sauce over each chicken breast, and sprinkle shredded mozzarella on top.
  6. Transfer the skillet to the preheated oven and bake for about 20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  7. If desired, broil for an additional 2-3 minutes to brown the cheese.
  8. Remove from the oven and let it rest for a few minutes. Garnish with fresh basil or parsley if desired.
