Keto Chicken Pizza Casserole

Ingredients:

For the Casserole:

  • 2 cups cooked chicken, shredded (about 2-3 chicken breasts)
  • 1 1/2 cups marinara sauce (look for no-sugar-added or make your own)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup pepperoni slices (or any other pizza toppings you like, such as sausage or mushrooms)
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves, chopped (optional for garnish)

For the Topping:

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Extra pepperoni slices (optional)

Instructions:

1. Preheat and Prep:

  • Preheat your oven to 375°F (190°C).
  • Grease a 9×9-inch baking dish or a casserole dish with cooking spray or a little olive oil.

2. Prepare the Chicken Mixture:

  • In a large mixing bowl, combine the shredded chicken, marinara sauce, cream cheese, 1 1/2 cups of mozzarella cheese, Parmesan cheese, bell pepper, red onion, garlic powder, oregano, basil, salt, and pepper. Mix everything well to combine.

3. Assemble the Casserole:

  • Pour the chicken mixture into the prepared baking dish and spread it out evenly. Top with the extra mozzarella cheese, Parmesan cheese, and pepperoni slices (if using) for added flavor and texture.

4. Bake the Casserole:

  • Place the casserole in the preheated oven and bake for 20-25 minutes or until the cheese is melted, bubbly, and golden brown on top.

5. Garnish and Serve:

  • Once the casserole is done, remove it from the oven and let it cool for a few minutes before serving.
  • Garnish with fresh chopped basil (optional) for a burst of flavor.
  • Serve hot and enjoy!

Storage:

  • Store any leftovers in an airtight container in the fridge for up to 3-4 days. You can also freeze the casserole for longer storage, up to 3 months. To reheat, simply warm it in the oven or microwave.

  • Mushrooms: Sauté mushrooms and add them to the chicken mixture for a heartier casserole.
