  • Instructions:
    1. Prepare the Filling:

In a large skillet, heat the olive oil over medium heat.
Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute.
Stir in the diced celery (and carrots if using) and cook for 5 minutes until they start to soften.
Add the shredded chicken to the skillet.
Pour in the chicken broth and heavy cream. Stir to combine.
Sprinkle in the almond flour to thicken the sauce, and stir well.
Add the dried thyme, rosemary, salt, and pepper.
Let the mixture simmer for 5-10 minutes, or until thickened.
Stir in the frozen peas and cook for another 2 minutes. Adjust seasoning as needed.
    2. Prepare the Biscuits:

Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the almond flour, baking powder, and salt.
In another bowl, mix the heavy cream, eggs, and melted butter.
Combine the wet and dry ingredients and mix until just blended. The dough will be somewhat thick.
Drop spoonfuls of the biscuit dough over the chicken mixture in the skillet or a baking dish, spacing them a bit apart.
    3. Bake:

Transfer the skillet or baking dish to the preheated oven.
Bake for 20-25 minutes, or until the biscuit tops are golden brown and the filling is bubbly.
    4. Serve:

Let the pot pie cool for a few minutes before serving. This allows the filling to set a bit.
Enjoy your keto Chicken Pot Pie with biscuits! It’s a comforting dish that’s lower in carbs but still full of flavor.
