
Keto Chicken & Waffles Pizza
Ingredients:
For the Keto Pizza Crust:
- 1 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 1/2 cups almond flour
- 1 large egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Pinch of salt
For the Toppings:
- 1 cup cooked and shredded chicken breast
- 1/4 cup sugar-free barbecue sauce
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions
For the Keto Waffle:
- 2 large eggs
- 2 tablespoons almond flour
- 2 tablespoons coconut flour
- 2 tablespoons unsweetened almond milk
- 1 tablespoon melted butter
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- Pinch of salt

Instructions:
- Preheat your oven to 375°F (190°C).
- To make the Keto Pizza Crust:
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
- In another bowl, whisk together the almond flour, egg, baking powder, garlic powder, onion powder, and salt.
- Add the melted cheese mixture to the almond flour mixture and knead until a dough forms.
- Press the dough onto a parchment-lined baking sheet to form a pizza crust, about 1/4 inch thick. Bake in the preheated oven for 10-12 minutes, or until the crust is golden brown.
- To make the Toppings:
- In a small bowl, toss the shredded chicken with the sugar-free barbecue sauce until well coated.
- Spread the barbecue chicken evenly over the baked pizza crust.
- Sprinkle the shredded mozzarella cheese on top of the barbecue chicken.
- Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- To make the Keto Waffle:
- Preheat a waffle iron according to manufacturer’s instructions.
- In a bowl, whisk together the eggs, almond flour, coconut flour, almond milk, melted butter, baking powder, vanilla extract, and salt until smooth.
- Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions, until golden brown and crisp.
- Once the waffle is cooked, remove it from the waffle iron and cut it into quarters.
- To assemble the Keto Chicken & Waffles Pizza:
- Place the cooked waffle quarters on top of the barbecue chicken and cheese layer on the pizza.
- Garnish with chopped green onions.
