Ingredients:

  • 1 cup heavy cream
  • 4 oz sugar-free dark chocolate (at least 85% cocoa)
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup powdered erythritol or sweetener of your choice
  • 1 tsp vanilla extract
  • Pinch of salt

 

Instructions:

  1. Melt the Chocolate: Start by melting the sugar-free dark chocolate. You can do this in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave. Stir occasionally until fully melted and smooth.
  2. Whip the Cream: In a separate mixing bowl, pour the heavy cream and beat it with an electric mixer or whisk until it forms soft peaks. This may take about 3-5 minutes, depending on the temperature of the cream.
  3. Mix Cocoa Powder & Sweetener: In a small bowl, mix the unsweetened cocoa powder, powdered erythritol, and a pinch of salt. Add this mixture to the whipped cream and continue to beat until it is fully incorporated and smooth.
  4. Combine with Chocolate: Slowly fold the melted chocolate into the whipped cream mixture using a spatula. Do this gently to maintain the mousse’s light texture.
  5. Chill: Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours, or until it firms up to your liking.
  6. Serve: Once chilled, top the mousse with a dollop of whipped cream or a sprinkle of cocoa powder for an extra indulgent treat. You can also add some shaved sugar-free chocolate or a few berries for extra flavor.

Tips:

  • You can adjust the sweetness by adding more or less sweetener, depending on your preference.
  • For an extra rich texture, you can fold in a bit of mascarpone cheese or cream cheese.
  • If you prefer a lighter mousse, you can replace half of the heavy cream with Greek yogurt.
