Keto Cinnamon Roll
Ingredients:
For the dough:
- 2 cups almond flour
- 2 tablespoons coconut flour
- 1/4 cup granulated erythritol or sweetener of your choice
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
For the filling:
- 2 tablespoons melted butter
- 2 tablespoons granulated erythritol
- 2 teaspoons ground cinnamon
For the frosting:
- 4 oz cream cheese, softened
- 2 tablespoons powdered erythritol
- 1 teaspoon vanilla extract
- 2-4 tablespoons heavy cream

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- Prepare the dough: In a large bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt. Add the eggs, melted butter, and vanilla extract. Mix until a dough forms.
- Roll out the dough: Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
- Make the filling: In a small bowl, mix together the melted butter, sweetener, and ground cinnamon to make the filling. Spread the filling evenly over the rolled-out dough.
- Roll the dough: Starting from one long edge, carefully roll the dough into a tight log.
- Cut the rolls: Use a sharp knife to cut the log into 8 equal-sized rolls.
- Bake: Place the rolls in the prepared baking dish, cut side up. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and cooked through.
- Make the frosting: While the rolls are baking, prepare the frosting. In a medium bowl, beat together the cream cheese, powdered erythritol, and vanilla extract until smooth. Add heavy cream as needed to achieve your desired consistency.
- Frost the rolls: Once the rolls are done baking and have cooled slightly, spread the frosting over the top of the rolls.
