Ingredients:
For the bread:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1/2 cup erythritol or any low-carb sweetener of your choice
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened almond milk or any low-carb milk alternative
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
For the cinnamon filling:
- 1/4 cup melted butter
- 1/4 cup erythritol or any low-carb sweetener
- 1 tablespoon ground cinnamon
For the cream cheese icing:
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol or any low-carb powdered sweetener
- 1 tablespoon heavy cream
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until well combined.
- Add eggs, almond milk, melted butter, and vanilla extract to the dry ingredients. Mix until smooth and well combined.
- In a separate bowl, mix together the ingredients for the cinnamon filling: melted butter, erythritol, and ground cinnamon.
- Pour half of the bread batter into the prepared loaf pan, spreading it evenly.
- Drizzle half of the cinnamon filling over the batter in the loaf pan.
- Pour the remaining bread batter over the cinnamon filling layer.
- Drizzle the remaining cinnamon filling over the top of the bread batter.
- Use a knife or toothpick to swirl the cinnamon filling into the bread batter.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- While the bread is cooling, prepare the cream cheese icing. In a small bowl, beat together the softened cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth.
- Once the bread has cooled, drizzle the cream cheese icing over the top.
