KETO COWBOY COOKIES

KETO COWBOY COOKIES

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup unsweetened chocolate chips (or sugar-free chocolate chunks)
  • 1/4 cup chopped walnuts (or any nuts of your choice)
  • 1/4 cup sugar-free sweetener (erythritol, monk fruit, or stevia to taste)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup butter, softened (or coconut oil for dairy-free)
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened peanut butter or almond butter (optional, for added richness)

Instructions:

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

2. Mix Dry Ingredients:

  • In a large mixing bowl, combine the almond flour, coconut flour, shredded coconut, chocolate chips, walnuts, baking soda, and salt. Stir well to make sure everything is evenly distributed.

3. Combine Wet Ingredients:

  • In a separate bowl, whisk together the eggs, softened butter (or coconut oil), vanilla extract, and peanut butter or almond butter (if using). Mix until smooth and creamy.

4. Combine Wet and Dry Ingredients:

  • Add the wet ingredients to the dry ingredients and stir until fully combined. The dough will be a bit thick and slightly sticky, but it should hold together when pressed.

5. Shape the Cookies:

  • Using a spoon or your hands, scoop out tablespoon-sized portions of dough and roll them into balls. Place the balls onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten the dough balls with the back of a spoon or your fingers to form cookie shapes.

6. Bake the Cookies:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cookies have set. Keep a close eye on them to avoid over-baking, as they can firm up quickly once they cool.

7. Cool and Serve:

  • Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely. This helps them firm up and prevents them from breaking.

Tips:

  • Sweetener: Adjust the amount of sweetener based on your personal preference and the type of sweetener you’re using. Some may be sweeter than others, so always taste the dough before baking.
  • Texture: If you like your cookies a bit softer, reduce the baking time slightly or store them in an airtight container to keep them moist.
  • Mix-ins: Feel free to add other low-carb ingredients, such as chia seeds, hemp hearts, or sugar-free dried cranberries, to create your perfect cowboy cookie.

These Keto Cowboy Cookies are a delightful, low-carb treat that gives you the perfect balance of sweetness, crunch, and chewiness—all while keeping you on track with your keto goals! Enjoy them with a hot beverage or as a satisfying snack anytime.
