Ingredients:

Instructions:

  1. Prepare the crepe batter:
    • In a blender or mixing bowl, combine the softened cream cheese, eggs, almond flour, melted butter, vanilla extract, and optional sweetener. Blend or mix until smooth and well combined.
    • Let the batter sit for a few minutes to allow the almond flour to absorb the liquid.
  2. Cook the crepes:
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with butter or oil.
    • Pour a small amount of batter into the skillet, swirling it around to spread it thinly and evenly.
    • Cook the crepe for about 1-2 minutes on one side until the edges start to brown slightly and bubbles form on the surface. Carefully flip and cook for an additional 1-2 minutes on the other side.
