Keto Fluffy

Ingredients:

  • 2/3 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any keto-friendly milk of your choice)
  • 1 tsp vanilla extract
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tbsp sweetener (like erythritol, stevia, or monk fruit; optional)
  • 1/4 tsp cinnamon (optional, for added flavor)

Instructions:

  1. Prepare the batter:
    • In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, salt, sweetener (if using), and cinnamon.
    • In a separate bowl, whisk the eggs, almond milk, vanilla extract, and melted butter together until smooth.
    • Add the wet ingredients to the dry ingredients and mix until just combined. The batter should be thick but pourable. If it’s too thick, add a little more almond milk, a tablespoon at a time, to reach the desired consistency.
  2. Preheat the pan:
    • Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
  3. Cook the pancakes:
    • For each pancake, pour about 2-3 tablespoons of batter onto the skillet. Use the back of a spoon to gently spread the batter into a round shape.
    • Cook for 2-3 minutes until the edges start to set and small bubbles form on the surface. Flip the pancake and cook for another 1-2 minutes on the other side until golden brown and cooked through.
    • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  4. Serve:
    • Stack the pancakes on a plate and top with sugar-free syrup, fresh berries, whipped cream, or a dollop of almond butter if desired.

Tips:

  • For extra fluffiness: Make sure you’re using baking powder and not baking soda. Baking powder helps the pancakes rise and stay fluffy.
  • Adjusting sweetness: Depending on the sweetness of your keto-friendly sweetener, adjust the amount to taste.
  • Storage: These pancakes can be stored in the fridge for 2-3 days or frozen for longer storage. Just reheat them in a skillet or microwave.
