Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup beef broth (check for no added sugars)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 1/2 cups shredded Gruyere cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and sear on both sides until golden brown. Remove chicken from the skillet and set aside.
  4. In the same skillet, add butter and sauté onions over medium heat until caramelized, about 15-20 minutes.
  5. Add minced garlic to the onions and cook for an additional 2 minutes until fragrant.
  6. Pour in beef broth and Worcestershire sauce. Stir to combine.
  7. Return the seared chicken breasts to the skillet, nestling them into the onion mixture.
  8. Sprinkle dried thyme over the chicken and onion mixture.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Sprinkle shredded Gruyere cheese over the chicken and return to the oven. Bake until the cheese is melted and bubbly.
  11. Broil for 1-2 minutes until the cheese is golden brown.
  12. Remove from the oven, let it rest for a few minutes, and serve.
