Keto Garlic Bread

Ingredients:

  • 2 cups almond flour (or coconut flour if preferred)
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup melted butter (plus extra for brushing)
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano (optional)
  • 2 tbsp fresh parsley, chopped (optional for garnish)
  • 1/2 cup shredded mozzarella cheese (for the bread dough)

For the garlic butter topping:

  • 2 tbsp melted butter
  • 2-3 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. Prepare the bread dough:
    • In a large mixing bowl, combine the almond flour, Parmesan cheese, baking powder, and salt.
    • In a separate bowl, whisk together the eggs and melted butter until smooth.
    • Add the wet ingredients to the dry ingredients and mix until fully combined.
    • Stir in the shredded mozzarella cheese to the dough, mixing well.
  3. Shape and bake:
    • Transfer the dough to a lined baking sheet or a greased loaf pan, pressing it into an even layer.
    • Bake for 20-25 minutes or until the bread is golden brown and cooked through.
  4. Prepare the garlic butter:
    • While the bread is baking, prepare the garlic butter topping. In a small bowl, melt the butter and add the minced garlic. Mix well.
  5. Brush with garlic butter:
    • Once the bread is baked, remove it from the oven and brush the top generously with the garlic butter mixture.
    • If desired, sprinkle with fresh chopped parsley for a pop of color and flavor.
  6. Serve:
