Keto Garlic Parmesan Knots

Ingredients:

For the dough:

  • 2 cups almond flour
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp garlic powder (optional, for extra garlic flavor)
  • 1 tbsp olive oil (for brushing)

For the garlic Parmesan topping:

  • 3 tbsp unsalted butter, melted
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (optional, for garnish)
  • 1/4 tsp garlic powder (optional, for extra flavor)

 

Instructions:

1. Make the Dough:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30-second intervals, stirring in between, until both cheeses are melted and fully combined into a smooth, gooey mixture.
  • In a separate bowl, whisk the almond flour, eggs, baking powder, salt, and garlic powder (if using). Stir in the melted cheese mixture, then mix everything together until a dough forms. If the dough is too sticky, add a little more almond flour.

2. Shape the Knots:

  • Divide the dough into 8 equal portions and roll each portion into a small ball.
  • Roll each ball into a rope about 6 inches long, then tie them into knots. Place each knot onto the prepared baking sheet.

3. Bake the Knots:

  • Brush the tops of the knots with olive oil to help them crisp up in the oven.
  • Bake in the preheated oven for 12-15 minutes or until the knots are golden brown and firm to the touch.

4. Prepare the Garlic Parmesan Topping:

  • While the knots are baking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for about 1 minute, just until the garlic becomes fragrant.
  • Remove the saucepan from the heat and stir in the grated Parmesan cheese and garlic powder (if using).

5. Coat the Knots:

  • Once the knots are done baking, remove them from the oven and immediately brush them with the garlic Parmesan butter mixture. Make sure each knot is generously coated.
  • Garnish with fresh chopped parsley for a pop of color and extra flavor, if desired.

6. Serve:
