Keto Instant Pot Seafood Bisque
Ingredients:
- 1 pound mixed seafood (such as shrimp, scallops, and/or crab meat)
- 4 cups seafood or chicken broth
- 1 cup heavy cream
- 1/2 cup diced onion
- 1/4 cup diced celery
- 1/4 cup diced red bell pepper
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons tomato paste
- 1/4 cup dry white wine (optional)
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- Chopped fresh parsley for garnish
Instructions:
- Turn on the Instant Pot and select the “Saute” function. Once it’s hot, add the butter or olive oil.
- Add the diced onion, celery, and red bell pepper to the Instant Pot. Saute for about 3-5 minutes until the vegetables are softened.
- Add the minced garlic, dried thyme, paprika, salt, and pepper. Stir and cook for another minute until fragrant.
- Pour in the dry white wine (if using) and let it simmer for a minute, scraping any browned bits from the bottom of the pot.
- Add the seafood broth, heavy cream, tomato paste, Worcestershire sauce, and bay leaf to the pot. Stir well to combine.
- Add the mixed seafood to the pot, ensuring it’s submerged in the liquid.
- Close the Instant Pot lid and set the valve to the sealing position. Select the “Soup” function and set the cooking time for 5 minutes at high pressure.
- Once the cooking time is complete, allow for a natural pressure release for about 5 minutes, then carefully do a quick release to release any remaining pressure.
- Open the Instant Pot lid and discard the bay leaf. Taste the bisque and adjust the seasoning if needed.
- Serve the seafood bisque hot, garnished with chopped fresh parsley.
