Keto Lemon Tiramisu

Ingredients:

For the Lemon Curd:

  • 3 large eggs
  • 1/2 cup granulated keto-friendly sweetener (e.g., erythritol, stevia)
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1/4 cup unsalted butter, cubed

For the Tiramisu Layers:

  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated keto-friendly sweetener
  • 1 package of keto-friendly ladyfinger-style cookies (you can use almond flour-based ones)
  • Strong brewed coffee or espresso, cooled
  • Unsweetened cocoa powder, for dusting

Instructions:

  1. Prepare the Lemon Curd:
    • In a heatproof bowl, whisk together the eggs and sweetener until well combined.
    • Place the bowl over a pot of simmering water (double boiler) and add lemon zest, lemon juice, and butter.
    • Whisk continuously until the mixture thickens and coats the back of a spoon, similar to a custard. This should take about 10-15 minutes.
    • Remove from heat and let it cool. Cover with plastic wrap directly touching the curd’s surface to prevent a skin from forming. Refrigerate until cold.
  2. Prepare the Tiramisu Filling:
    • In a mixing bowl, beat the heavy whipping cream until stiff peaks form. Set aside.
    • In another bowl, whisk together the mascarpone cheese, vanilla extract, and sweetener until smooth.
    • Gently fold the whipped cream into the mascarpone mixture until well combined.
  3. Assemble the Tiramisu:
    • Dip the ladyfinger-style cookies into the cooled brewed coffee or espresso one at a time, making sure not to soak them too much. Arrange a layer of dipped cookies in the bottom of a serving dish.
    • Spread a layer of the mascarpone mixture over the cookies.
    • Drizzle a layer of lemon curd over the mascarpone mixture.
  4. Repeat the layers:
    • Add another layer of dipped cookies.
    • Spread another layer of the mascarpone mixture.
    • Drizzle another layer of lemon curd.
  5. Finish:
    • Dust the top of the tiramisu with unsweetened cocoa powder.
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
  6. Serve:
    • Cut into portions and serve chilled.
