Ingredients:

Vanilla Layer:

  • 1/2 cup coconut oil (melted)
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (or coconut cream for dairy-free)

Strawberry Layer:

  • 1/2 cup coconut oil (melted)
  • 1/4 cup powdered erythritol
  • 1/4 tsp strawberry extract (adjust for more flavor if needed)
  • A few drops of natural pink or red food coloring (optional)

Instructions:

1. Prepare the Chocolate Layer:

  • In a medium bowl, whisk together melted coconut oil, cocoa powder, powdered erythritol, and vanilla extract until smooth.
  • Pour this chocolate mixture into the bottom of a silicone mold or a parchment-lined baking dish (an 8×8 pan works well).
  • Freeze the chocolate layer for about 15 minutes, or until firm.

2. Prepare the Vanilla Layer:
