Strawberry Layer:
- 1/2 cup coconut oil (melted)
- 1/4 cup powdered erythritol
- 1/4 tsp strawberry extract (adjust for more flavor if needed)
- A few drops of natural pink or red food coloring (optional)
Instructions:
1. Prepare the Chocolate Layer:
- In a medium bowl, whisk together melted coconut oil, cocoa powder, powdered erythritol, and vanilla extract until smooth.
- Pour this chocolate mixture into the bottom of a silicone mold or a parchment-lined baking dish (an 8×8 pan works well).
- Freeze the chocolate layer for about 15 minutes, or until firm.
2. Prepare the Vanilla Layer:
