Ingredients:

For the nougat layer:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup powdered erythritol or sweetener of choice
  • 1/4 cup creamy almond butter
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the caramel layer:

  • 1/2 cup sugar-free caramel sauce (you can make your own using a keto-friendly recipe or use a store-bought version)
  • 1 cup unsalted roasted peanuts (or nuts of your choice)

For the chocolate coating:

  • 6 oz sugar-free dark chocolate or dark chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Prepare the nougat layer: In a mixing bowl, combine the shredded coconut, almond flour, powdered sweetener, almond butter, melted coconut oil, vanilla extract, and a pinch of salt. Mix well until a dough-like consistency forms.
  2. Press into a pan: Line a baking dish or pan with parchment paper. Press the nougat mixture evenly into the bottom of the pan. Place it in the freezer while you prepare the other layers.
  3. Add the caramel and nuts: Once the nougat layer has set slightly, spread the sugar-free caramel sauce evenly over the nougat. Sprinkle the roasted peanuts (or nuts of your choice) on top of the caramel layer. Press them gently into the caramel.
  4. Freeze again: Return the pan to the freezer and let it chill for about 1-2 hours until everything is firm.
  5. Prepare the chocolate coating: In a microwave-safe bowl or using a double boiler, melt the sugar-free dark chocolate with a tablespoon of coconut oil, stirring until smooth.
  6. Coat the bars: Remove the pan from the freezer. Cut the layered mixture into bars. Dip each bar into the melted chocolate mixture, ensuring it’s fully coated. Place the coated bars on a parchment-lined tray or plate.
  7. Set and store: Allow the chocolate coating to set by placing the tray in the fridge for about 20-30 minutes. Once set, the Keto Payday Candy Bars are ready to enjoy! Store any leftovers in an airtight container in the fridge.
