Keto Payday Candy Bars
Ingredients:
- 1 cup unsalted peanuts (or any nuts of your choice)
- 1 cup sugar-free caramel sauce (you can make your own using a recipe or purchase a sugar-free version)
- 1 cup unsweetened shredded coconut
- 1 cup sugar-free chocolate chips or dark chocolate (at least 70% cocoa)
Instructions:
- Prepare a Baking Pan: Line a baking pan with parchment paper or aluminum foil, ensuring that it hangs over the edges for easy removal later. This will prevent sticking.
- Melt the Chocolate: In a microwave-safe bowl, melt the sugar-free chocolate chips or dark chocolate. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted. Be careful not to overheat.
- Spread Chocolate Layer: Pour half of the melted chocolate into the lined baking pan, spreading it out evenly to form the bottom layer. Place the pan in the refrigerator to allow the chocolate layer to set.
- Prepare the Caramel: In a saucepan, heat the sugar-free caramel sauce over low heat until it becomes more fluid and easy to work with. Stir occasionally to prevent burning.
- Mix Ingredients: In a mixing bowl, combine the unsalted peanuts and shredded coconut. Stir until evenly mixed.
- Layer the Bars: Remove the baking pan from the refrigerator once the chocolate layer has set. Pour the caramel sauce over the chocolate layer, spreading it out evenly. Then, sprinkle the peanut and coconut mixture over the caramel layer, pressing down gently to ensure it sticks.
- Top with Chocolate: Pour the remaining melted chocolate over the peanut and coconut layer, spreading it out evenly to cover the top.
- Chill and Set: Place the baking pan back in the refrigerator and allow the Keto Payday Candy Bars to chill for at least 1-2 hours, or until the chocolate is completely set.
- Slice and Serve: Once the bars have hardened, remove them from the pan using the edges of the parchment paper or foil. Use a sharp knife to cut them into individual bars or squares.
