⅔ cup sugar-free maple syrup
¼ cup butter, melted
½ cup erythritol (or preferred keto sweetener)
3 large eggs
1 tsp vanilla extract
¼ tsp salt
Instructions
1. Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the almond flour, coconut flour, erythritol, and salt.
Add the cold butter and mix until the mixture resembles coarse crumbs.
Add the egg and vanilla extract, mixing until a dough forms.
Press the dough evenly into a 9-inch pie pan. Poke holes in the bottom of the crust with a fork.
Bake for 10-12 minutes, or until the crust is just golden. Set aside to cool.

2. Make the Filling:
In a large bowl, whisk together the melted butter, erythritol, and sugar-free maple syrup.
Add the eggs, vanilla, and salt, whisking until smooth.
Stir in the pecan halves until well-coated with the mixture.
3. Assemble and Bake:
Pour the pecan filling into the prepared crust.
Bake at 350°F for 35-40 minutes, or until the filling is set but slightly jiggles in the center.
Let the pie cool completely before serving.
