Keto Potato Soup
Ingredients:
- 1 medium head of cauliflower, chopped into florets
- 4 slices of bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional toppings: shredded cheddar cheese, chopped green onions, sour cream

Instructions:
- In a large pot, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon from the pot and set it aside on a plate lined with paper towels to drain excess grease.
- In the same pot with the bacon fat, add diced onion and minced garlic. Sauté until the onions are translucent and fragrant, about 3-4 minutes.
- Add the chopped cauliflower florets to the pot along with the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 15-20 minutes, or until the cauliflower is fork-tender.
- Once the cauliflower is cooked, use an immersion blender to blend the soup until smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to simmer for an additional 5-10 minutes to heat through and meld the flavors.
- Serve the soup hot, garnished with crispy bacon bits, shredded cheddar cheese, chopped green onions, and a dollop of sour cream if desired.
