Keto Pralines

Ingredients:

  • 1 cup pecan halves or pieces
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup powdered erythritol (or another keto-friendly sweetener)
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Prepare the Pecans: Toast the pecans in a dry skillet over medium heat for about 5 minutes, stirring often to prevent burning. Remove from heat and set aside.
  2. Create the Base Mixture: In a medium saucepan, melt the butter over medium heat. Once melted, add the heavy cream and powdered erythritol. Stir well to combine.

 

  1. Simmer: Continue cooking the mixture, stirring frequently, until it starts to thicken and turns a caramel color. This should take about 10–15 minutes. Be careful not to let it burn by stirring consistently.
  2. Add Flavor: Once the mixture has thickened, remove it from heat and stir in the vanilla extract, salt, and toasted pecans. Mix everything until the pecans are fully coated.
  3. Form the Pralines: Use a spoon to drop dollops of the mixture onto a parchment-lined baking sheet, forming small clusters or circles. Let them cool at room temperature until they harden.
  4. Serve: Once cooled and set, the pralines are ready to enjoy! Store any extras in an airtight container.
