Keto Pretzel Bites

Keto pretzel bites sound so fun and delicious! They’re soft, salty, and great for snacking. Here’s a recipe to make them low-carb and totally satisfying:

Keto Pretzel Bites

Ingredients:

For the dough:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese (for a chewy texture)
  • 2 oz cream cheese (softened)
  • 1 tbsp melted butter

For boiling:

  • 1/4 cup baking soda (for boiling the pretzel bites)

For the topping:

  • Coarse sea salt (to sprinkle on top)

Instructions:

1. Preheat the oven:
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
2. Make the dough:
  • In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30-45 seconds, then stir until the mixture is smooth and melted.
  • In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt.
  • Add the egg, melted butter, and the melted cheese mixture into the dry ingredients. Stir everything together until you have a dough-like consistency. It may seem a little sticky, but that’s okay.
3. Shape the pretzel bites:
  • Lightly grease your hands with some butter or oil and roll the dough into small balls (about 1-inch in size). You can also roll it into a long rope and cut it into bite-sized pieces if you prefer.
4. Boil the bites:
  • Bring a pot of water to a boil and add the baking soda.
  • Carefully drop the pretzel bites into the boiling water in batches. Boil for 30 seconds per batch, then remove with a slotted spoon and place them on the prepared baking sheet.
5. Bake:
  • Once all the pretzel bites are boiled and on the baking sheet, sprinkle with coarse sea salt.
  • Bake for 12-15 minutes, or until golden brown.
6. Serve:
  • Let the pretzel bites cool slightly before serving. They’re best enjoyed fresh out of the oven, but you can also store them in an airtight container for a few days.

Optional Dips:

You can serve these pretzel bites with some keto-friendly mustard, cheese sauce, or ranch dressing for extra flavor!

These keto pretzel bites are so satisfying and perfect for anyone who loves a soft, salty snack. Let me know how they turn out if you give them a try! 🥨
