For the Chaffles:

  • 1 cup shredded mozzarella cheese (your choice of cheese)
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon caraway seeds

For the Filling:

  • 8 ounces cooked corned beef, thinly sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup mustard


Step 1: Prepare the Chaffle Batter:

  1. In a medium bowl, whisk the eggs until well beaten. Add almond flour, baking powder, and caraway seeds. Stir until the mixture is smooth and well combined. Then, fold in the shredded cheese and mix thoroughly.

Step 2: Cook the Chaffles: 2. Preheat your mini waffle maker and lightly grease it with cooking spray to prevent sticking.

  1. Pour approximately 1/4 cup of the batter into the center of the waffle maker and close the lid.
