- 4 oz cream cheese, softened
- 1/4 cup finely diced cucumber
- 1 tsp fresh herbs (dill, chives, or parsley)
Instructions:
For the Keto Crackers:
- Prepare the Dough: In a medium bowl, combine almond flour, coconut flour, Parmesan cheese, baking powder, and salt. Cut in the chilled butter pieces until the mixture resembles coarse crumbs.
- Add Wet Ingredients: Add the egg and apple cider vinegar. Mix until a dough forms. If the dough is too crumbly, you can add a bit of cold water, 1 tsp at a time.
- Roll and Cut: Place the dough between two pieces of parchment paper and roll it out to about 1/8-inch thickness. Use a small round cookie cutter (about 1.5 inches) to cut out crackers. Place them on a parchment-lined baking sheet.
- Bake: Preheat your oven to 350°F (175°C). Bake the crackers for about 10–12 minutes, or until golden brown. Let them cool completely on the baking sheet, as they will firm up as they cool.
For the Fillings:
- Cream Cheese and Smoked Salmon: Mix softened cream cheese and smoked salmon together. Spread a little of this mixture onto one cracker, place a small dill sprig, and top with another cracker.
- Ham and Cheddar: Place a small square of ham and cheddar between two crackers. Press gently to secure.
- Pimento Cheese Spread: Mix shredded cheddar, mayonnaise, and diced pimentos. Add salt and pepper to taste. Spoon a small amount onto a cracker and sandwich with another cracker.
- Cucumber and Herb Cream Cheese: Combine cream cheese, cucumber, and herbs. Spread a little of this mixture onto a cracker and place another cracker on top.
Assembly:
- Once all fillings are prepared, assemble the mini sandwiches by placing the filling between two crackers and gently pressing together. Arrange on a platter and serve!
