Keto Shepherds Pie
Ingredients:
For the filling:
- 1 lb ground beef or lamb
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots (you can use fewer carrots to reduce carb content)
- 1 cup diced celery
- 1 cup beef or chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce (make sure it’s sugar-free)
- Salt and pepper to taste
- 1 tablespoon olive oil
For the mashed cauliflower topping:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter
- 1/4 cup heavy cream
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and cook until they are softened and fragrant.
- Add the ground beef or lamb to the skillet and cook until browned, breaking it up into smaller pieces as it cooks.
- Stir in the diced carrots and celery, and cook for another 5 minutes until the vegetables begin to soften.
- Add the tomato paste, Worcestershire sauce, and beef or chicken broth to the skillet. Season with salt and pepper to taste. Allow the mixture to simmer for about 10-15 minutes until the liquid reduces slightly and the flavors meld together.
- While the filling is simmering, prepare the mashed cauliflower topping. Steam or boil the cauliflower florets until they are tender, then drain them well.
- In a large bowl, mash the cauliflower with a potato masher or blend it using a food processor until smooth. Add the butter, heavy cream, and salt and pepper to taste. Mix until well combined.
- Transfer the meat filling into a baking dish and spread it out evenly.
- Spread the mashed cauliflower topping over the meat filling, smoothing it out with a spatula.
- If desired, sprinkle the shredded cheddar cheese over the top of the mashed cauliflower.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the filling is bubbling and the top is golden brown.
- Once done, remove the Shepherd’s Pie from the oven and allow it to cool slightly before serving.
