Lamb chops, garlic mash & asparagus

Ingredients:

For the lamb chops:

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For the garlic mashed potatoes:

  • 4 large russet potatoes, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

For the asparagus:

  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Start by preparing the lamb chops. In a small bowl, combine the olive oil, minced garlic, dried rosemary, salt, and pepper. Rub the mixture all over the lamb chops, ensuring they are evenly coated.
  3. Heat an oven-safe skillet or grill pan over medium-high heat. Once hot, add the lamb chops and sear them for about 2-3 minutes on each side, until they develop a nice crust.
  4. Transfer the skillet or pan with the lamb chops to the preheated oven and roast for an additional 10-12 minutes for medium-rare, or adjust the cooking time based on your desired doneness. Remove from the oven and let the lamb chops rest for a few minutes before serving.
  5. While the lamb chops are cooking, prepare the garlic mashed potatoes. Place the potato chunks and minced garlic in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender.
  6. Drain the potatoes and return them to the pot. Add the milk and butter. Mash the potatoes with a potato masher until smooth and creamy. Season with salt and pepper to taste. Keep warm.
  7. For the asparagus, preheat a separate skillet over medium heat. Add the olive oil and swirl to coat the pan. Add the trimmed asparagus spears and cook for about 5-7 minutes, stirring occasionally, until they become tender-crisp. Season with salt and pepper to taste.
  8. Arrange the lamb chops, garlic mashed potatoes, and asparagus on a plate. Serve with lemon wedges on the side for squeezing over the lamb chops and asparagus.
