🌱 Lemon Garlic Chickpea Fritters

Ingredients:

  • 1 ½ cups cooked chickpeas (or 1 can, drained & rinsed)

  • 2 cloves garlic, minced

  • 2 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • ¼ cup fresh parsley, chopped

  • ¼ cup onion, finely chopped

  • ½ tsp ground cumin

  • ¼ tsp paprika

  • ½ tsp salt (or to taste)

  • ¼ tsp black pepper

  • 2–3 tbsp chickpea flour (or all-purpose flour)

  • 2 tbsp olive oil (for frying)

Optional Add-ins:

  • 1 tbsp nutritional yeast (for a cheesy flavor)

  • 1 tbsp tahini (for richness)

  • A pinch of chili flakes (for spice)
