Lentil bolognese – as cheap as chips

Ingredients
3 stalks of celery (approx 25p)
3 carrots (approx 25p)
1 large white onion (approx 25p)
500g red lentils (approx 60p)
*Flat leaf parsley (50p)
3 cartons of passata (96p)
1 stock cube (approx 30p)
Salt
Approx 1200ml of boiling water
Sauté the onion, carrots & celery in a little oil until slightly softened. Add the lentils, parsley & cartons of passata, along with 500ml of stock. Bring to the boil and then turn down very low. Top up with boiling water when needed. Cook until the lentils have softened.
This makes 12 large potions. It could potentially make up to 24 portions, depending on how much you like to eat. We had two portions last night for dinner, and I have frozen 10. It freezes really well.
*I used parsley because I had it readily available. Dried oregano or mixed herbs work well. It also tastes fine with no herbs at all.
