Lightened Up Taco Bell Copycat Mexican Pizzas

Ingredients (Makes 4 servings):

For the “Pizzas”:

  • 4 medium whole wheat tortillas or low-carb tortillas
  • 1 cup refried black beans (low-fat or homemade)
  • 1 cup cooked ground turkey or chicken (optional, seasoned with taco spices)
  • 1 cup reduced-fat shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro (optional)

For the Sauce:

  • 1/2 cup tomato sauce
  • 1 teaspoon taco seasoning
  • 1 teaspoon hot sauce (optional, adjust to taste)

Instructions:

  1. Prepare the Tortillas:
    • Preheat the oven to 375°F (190°C). Spray the tortillas lightly with cooking spray and bake directly on the oven rack for 5–7 minutes per side until crispy. Alternatively, you can crisp them in an air fryer.
  2. Make the Sauce:
    • In a small saucepan, combine the tomato sauce and taco seasoning. Heat over low heat for 2–3 minutes, stirring occasionally. Add hot sauce if you like extra heat.
  3. Layer the Pizzas:
    • Spread a thin layer of refried beans on one crispy tortilla. Add a layer of cooked ground turkey/chicken if using. Top with another crispy tortilla.
  4. Top with Sauce and Cheese:
    • Spread 1–2 tablespoons of the taco sauce mixture over the top of the second tortilla. Sprinkle with shredded cheese, diced tomatoes, green onions, and cilantro.
  5. Bake:
    • Place the assembled pizzas on a baking sheet and bake for 5–7 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Slice each Mexican pizza into quarters and serve immediately. Pair with a dollop of Greek yogurt (as a sour cream substitute) or a side of salsa.
